Ingredients
  

Chicken
  • 4 pieces chicken breasts boneless and skinless
Marinade
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon jalapeno finely chopped
  • 1 teaspoon ginger grated
Peach Salsa
  • 2 cups peaches diced and peeled
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 tablespoon lime juice
  • 1 teaspoon jalapeno finely chopped

Method
 

Marinate the Chicken
  1. In a bowl, mix olive oil, soy sauce, honey, minced garlic, chopped jalapeno, and grated ginger. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Prepare the Peach Salsa
  1. In another bowl, combine diced peaches, red onion, cilantro, lime juice, and chopped jalapeno. Season with salt to taste. Set aside.
Cook the Chicken
  1. Heat a skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked and golden brown.
Serve
  1. Once the chicken is cooked, let it rest for a few minutes. Slice and serve topped with peach salsa.

Notes
