Marinate the Chicken
- In a bowl, mix olive oil, soy sauce, honey, minced garlic, chopped jalapeno, and grated ginger. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Prepare the Peach Salsa
- In another bowl, combine diced peaches, red onion, cilantro, lime juice, and chopped jalapeno. Season with salt to taste. Set aside.
Cook the Chicken
- Heat a skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked and golden brown.
Serve
- Once the chicken is cooked, let it rest for a few minutes. Slice and serve topped with peach salsa.
