Jack-O-Lantern Hand Pies

Ingredients
  

Pie Crust
  • 2 cups all-purpose flour plus more for dusting
  • 1 tsp salt
  • 1/2 cup unsalted butter cold, cubed
  • 6 tbsp ice water more if needed
Filling
  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1 tbsp vanilla extract
  • 1 egg beaten for egg wash

Method
 

Make the Pie Crust
  1. In a mixing bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Stir in ice water, a tablespoon at a time, until the dough comes together. Divide into two disks, wrap in plastic, and refrigerate for 30 minutes.
Prepare the Filling
  1. In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and vanilla extract until smooth.
Assemble the Hand Pies
  1. Preheat the oven to 375°F (190°C). Roll out one disk of dough on a floured surface to about 1/8 inch thick.
  2. Use a cookie cutter to cut out shapes. Place half of the shapes on a baking sheet.
  3. Spoon filling onto the center of each shape, leaving a border. Brush edges with beaten egg, then top with remaining shapes. Press edges to seal.
  4. Use a knife to cut small slits for steam on top of each pie.
Bake the Hand Pies
  1. Bake in the preheated oven for 25 minutes or until golden brown. Let cool before serving.
