Method
Prepare the Vegetables
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic, diced carrots, and celery. Cook for another 5 minutes until vegetables are tender.
Cook the Soup
- Pour in the vegetable broth and add oregano, basil, and bay leaf. Bring to a boil.
- Add pastina and cook according to package instructions, usually about 8-10 minutes.
Finish the Soup
- Stir in the chopped spinach and cook for an additional 2 minutes until wilted.
- Season with salt and pepper to taste. Remove bay leaf before serving.
Serve
- Ladle the soup into bowls and sprinkle with grated parmesan cheese before serving.
