Ingredients
  

Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 cup spinach fresh, chopped
Broth
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
Pasta
  • 1 cup pastina or any small pasta
Finishing Touches
  • 1 tablespoon olive oil
  • 1/4 cup parmesan cheese grated
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, diced carrots, and celery. Cook for another 5 minutes until vegetables are tender.
Cook the Soup
  1. Pour in the vegetable broth and add oregano, basil, and bay leaf. Bring to a boil.
  2. Add pastina and cook according to package instructions, usually about 8-10 minutes.
Finish the Soup
  1. Stir in the chopped spinach and cook for an additional 2 minutes until wilted.
  2. Season with salt and pepper to taste. Remove bay leaf before serving.
Serve
  1. Ladle the soup into bowls and sprinkle with grated parmesan cheese before serving.
