Ingredients
  

Chicken
  • 2 cups cooked chicken breast shredded
Salad Base
  • 4 cups mixed greens such as spinach and arugula
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup red onion thinly sliced
Honey Hot Sauce
  • 1/4 cup honey
  • 2 tablespoons hot sauce adjust to taste
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar

Method
 

Prepare the Chicken
  1. Grill the chicken breast until fully cooked, about 6-7 minutes per side. Let it rest before shredding.
  2. Once cooled, shred the chicken into bite-sized pieces.
Make the Honey Hot Sauce
  1. In a mixing bowl, whisk together honey, hot sauce, olive oil, and apple cider vinegar until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Add the shredded chicken on top of the salad.
  3. Drizzle the honey hot sauce over the salad and toss gently to combine.
Serve
  1. Divide the salad into bowls and serve immediately.
