- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the chopped bacon until crispy. Drain excess grease.
- In a large bowl, mix together honey, olive oil, salt, and black pepper.
- Toss the halved baby potatoes into the honey mixture until well-coated.
- Combine the crispy bacon with the glazed potatoes.
- Spread the potato-bacon mixture onto a parchment-lined baking sheet and roast for about 30–35 minutes until golden brown and fork-tender.
