Honey Bacon Roasted Potatoes

Ingredients
  

  • 1 lb baby potatoes (red and yellow) halved
  • 6 oz thick-cut bacon chopped
  • 1/4 cup honey
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Drain excess grease.
  3. In a large bowl, mix together honey, olive oil, salt, and black pepper.
  4. Toss the halved baby potatoes into the honey mixture until well-coated.
  5. Combine the crispy bacon with the glazed potatoes.
  6. Spread the potato-bacon mixture onto a parchment-lined baking sheet and roast for about 30–35 minutes until golden brown and fork-tender.
