Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts diced
  • 6 cups chicken broth low sodium preferred
  • 1 cup water
Vegetables
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
  • 2 cloves garlic minced
Noodles and Seasoning
  • 2 cups egg noodles uncooked
  • 1 teaspoon thyme dried
  • 1 teaspoon parsley dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Chicken
  1. In a large pot, combine the diced chicken, chicken broth, and water. Bring to a boil over medium-high heat.
  2. Reduce heat and simmer for about 10 minutes, or until the chicken is cooked through.
Add Vegetables
  1. Add the sliced carrots, celery, onion, and minced garlic to the pot.
  2. Simmer for an additional 10 minutes, until the vegetables are tender.
Cook Noodles
  1. Stir in the egg noodles, thyme, parsley, salt, and pepper.
  2. Cook for another 10 minutes, or until the noodles are tender.
Serve
  1. Remove from heat and let cool slightly before serving. Enjoy your homemade chicken noodle soup!
