Ingredients
  

Pasta and Beef
  • 12 oz whole wheat pasta any shape
  • 1 lb ground beef lean
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Creamy Sauce
  • 1 cup Greek yogurt plain, unsweetened
  • 1 cup beef broth low sodium
  • 1 cup spinach fresh, chopped
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp olive oil

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
Cook Beef
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add ground beef, salt, and black pepper. Cook until browned, about 5-7 minutes.
Make Creamy Sauce
  1. Reduce heat to low and stir in Greek yogurt, beef broth, dried oregano, and chopped spinach. Cook until spinach wilts and sauce is heated through, about 3-5 minutes.
Combine and Serve
  1. Add the cooked pasta to the skillet and toss to combine with the creamy beef sauce. Cook for an additional 2 minutes to heat through. Serve warm.
