Method
Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- Place the peppers upright in a baking dish.
Make the Filling
- In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan, basil, parsley, minced garlic, salt, and black pepper. Mix until well combined.
Stuff the Peppers
- Spoon the ricotta mixture into each bell pepper, packing it gently.
- Drizzle olive oil over the stuffed peppers.
Bake
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until the tops are golden.
Serve
- Remove from the oven and let cool for a few minutes before serving.
