Method
Prepare the Oven and Baking Sheet
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients
- In a mixing bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and salt.
Combine Wet Ingredients
- In another bowl, mix together the mashed bananas, honey, vanilla extract, and applesauce until smooth.
Combine Mixtures
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped nuts and chocolate chips if using.
Shape and Bake
- Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 15-20 minutes or until golden brown.
Cool and Serve
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
