Prepare the Base
- In a mixing bowl, combine shredded coconut, almond flour, maple syrup, and vanilla extract. Mix until well combined.
- Line a baking sheet with parchment paper.
Form the Bars
- Scoop out the coconut mixture and form small bars or patties, placing them on the lined baking sheet.
- Press one almond into the center of each bar.
Melt the Chocolate
- In a small microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Coat the Bars
- Drizzle or dip each coconut bar into the melted chocolate, ensuring they are well coated.
- Return the bars to the baking sheet and refrigerate for about 10 minutes, or until the chocolate hardens.
