Ingredients
  

Chicken and Salad Base
  • 2 cups grilled chicken breast, diced Cooked and cooled
  • 4 cups mixed salad greens Romaine, spinach, and arugula
  • 1 cup pineapple chunks Fresh or canned
  • 1 cup red bell pepper, diced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon soy sauce Low sodium preferred
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat for about 6-7 minutes on each side or until fully cooked. Let cool and dice.
  2. In a mixing bowl, combine the grilled chicken, pineapple chunks, red bell pepper, and avocado.
Make the Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, soy sauce, sesame oil, and grated ginger until well combined.
Assemble the Salad
  1. In a large bowl, add the mixed salad greens and top with the chicken and fruit mixture.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve immediately and enjoy your Hawaiian Chicken Salad!
