  • 1 lb ground turkey lean
  • 2 medium sweet potatoes peeled and diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp olive oil for cooking
Topping
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

Prepare the Ingredients
  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
Cook the Turkey Mixture
  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute.
  3. Add the ground turkey, salt, pepper, and paprika. Cook until the turkey is browned and cooked through, about 10 minutes.
Combine and Bake
  1. In a large baking dish, combine the cooked turkey mixture with the diced sweet potatoes.
  2. Cover with foil and bake in the preheated oven for 25 minutes.
  3. Remove the foil, sprinkle shredded cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  4. Garnish with fresh parsley before serving.
