Ingredients
  

Ground Turkey
  • 1 lb ground turkey lean
Rice
  • 1 cup white rice or brown rice
Vegetables
  • 1 cup bell pepper diced
  • 1 cup broccoli chopped
  • 1 cup carrots sliced
Bang Bang Sauce
  • 1/2 cup mayonnaise preferably low-fat
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tsp lime juice freshly squeezed
Seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp soy sauce low sodium
  • 1/2 tsp black pepper to taste

Method
 

Cook the Rice
  1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 18 minutes or until rice is tender and water is absorbed.
Prepare the Bang Bang Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.
Cook the Turkey and Vegetables
  1. In a large skillet over medium heat, add the ground turkey. Season with garlic powder, onion powder, soy sauce, and black pepper. Cook until browned and cooked through, about 7-10 minutes.
  2. Add the diced bell pepper, broccoli, and carrots to the skillet. Cook for an additional 5-7 minutes until vegetables are tender.
Assemble the Bowls
  1. Divide the cooked rice among four bowls. Top each bowl with the turkey and vegetable mixture. Drizzle with Bang Bang sauce.
  2. Serve immediately and enjoy!

Notes
