Method
Cook the Rice
- In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 18 minutes or until rice is tender and water is absorbed.
Prepare the Bang Bang Sauce
- In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.
Cook the Turkey and Vegetables
- In a large skillet over medium heat, add the ground turkey. Season with garlic powder, onion powder, soy sauce, and black pepper. Cook until browned and cooked through, about 7-10 minutes.
- Add the diced bell pepper, broccoli, and carrots to the skillet. Cook for an additional 5-7 minutes until vegetables are tender.
Assemble the Bowls
- Divide the cooked rice among four bowls. Top each bowl with the turkey and vegetable mixture. Drizzle with Bang Bang sauce.
- Serve immediately and enjoy!
