Ingredients
  

  • 1 pound minced chicken
  • 1/2 cup panko crumbs
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 large egg slightly beaten
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup grated parmesan cheese
  • 1 spray cooking spray

Method
 

  1. In a large mixing bowl, combine the minced chicken, panko crumbs, milk, kosher salt, garlic powder, slightly beaten egg, olive oil, and grated parmesan cheese. Mixing these ingredients thoroughly ensures every meatball is packed with flavor and moisture.
  2. Once all ingredients are combined well, start shaping them into small balls about one inch in diameter.
  3. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray. Once hot, carefully place the shaped meatballs in the skillet without overcrowding them. Cook on each side for about 5 minutes until they are golden brown and cooked through.
  4. After cooking, remove the meatballs from the skillet and let them rest on a paper towel for a minute. Serve them warm with your choice of dipping sauce or over your favorite noodles.
