  • 1 lb ground beef preferably lean
  • 1 cup orzo pasta
  • 1 can diced tomatoes 14.5 oz
  • 2 cups beef broth low sodium
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil
Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Beef
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent, about 3 minutes.
  2. Add ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Combine Ingredients
  1. Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  2. Once boiling, add the orzo pasta. Stir well and reduce heat to a simmer.
Cook the Orzo
  1. Cover the skillet and let it simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  2. Stir occasionally to prevent sticking.
Serve
  1. Remove from heat and let it sit for a few minutes. Serve hot, garnished with grated parmesan cheese and chopped parsley.
