Ingredients
  

Grilled Shrimp
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon paprika for seasoning
  • 1 teaspoon garlic powder for seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Corn Salsa
  • 1 cup corn fresh or canned
  • 1 medium red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt to taste
Creamy Garlic Sauce
  • 1/2 cup Greek yogurt or sour cream
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Bowl Assembly
  • 2 cups cooked rice white or brown
  • 1 large avocado sliced
  • 1/4 cup lime wedges for serving

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine olive oil, paprika, garlic powder, salt, and black pepper. Add the shrimp and toss to coat evenly.
  2. Preheat the grill to medium-high heat. Thread the shrimp onto skewers if desired.
Grill the Shrimp
  1. Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and cooked through.
Make the Corn Salsa
  1. In a mixing bowl, combine corn, red bell pepper, red onion, cilantro, lime juice, and salt. Mix well and set aside.
Prepare the Creamy Garlic Sauce
  1. In a small bowl, mix together Greek yogurt, minced garlic, lemon juice, salt, and black pepper until smooth.
Assemble the Bowls
  1. In each bowl, add a serving of cooked rice, top with grilled shrimp, corn salsa, and sliced avocado.
  2. Drizzle with creamy garlic sauce and serve with lime wedges on the side.
