Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
Wet Ingredients
  • 1 cup zucchini, grated squeeze out excess moisture
  • 1 cup cheddar cheese, shredded sharp or mild
  • 1 cup milk or buttermilk
  • 1 large egg
  • 1 tbsp olive oil
Flavor Ingredients
  • 1 cup green onions, chopped white and green parts

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
Combine Wet Ingredients
  1. In another bowl, combine the grated zucchini, shredded cheddar, milk, egg, and olive oil. Mix well.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped green onions.
Bake the Bread
  1. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
