Preheat your oven to 400°F (200°C).
In a large bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk together until well blended.
Add the potato wedges to the bowl with your marinade. Toss them well until each wedge is evenly coated.
Spread the marinated potato wedges in a single layer on a large baking sheet.
Place the baking sheet in your preheated oven and roast for about 45 minutes, turning halfway through.
Once golden brown, sprinkle crumbled feta cheese over the hot potatoes.
Garnish with freshly chopped parsley before serving.
