Greek Feta Roast Potatoes

Crispy exteriors and creamy interiors with a zesty kick from lemon and garlic, topped with crumbled feta cheese.

Ingredients
  

  • 2 pounds Yukon Gold potatoes peeled and cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk together until well blended.
  3. Add the potato wedges to the bowl with your marinade. Toss them well until each wedge is evenly coated.
  4. Spread the marinated potato wedges in a single layer on a large baking sheet.
  5. Place the baking sheet in your preheated oven and roast for about 45 minutes, turning halfway through.
  6. Once golden brown, sprinkle crumbled feta cheese over the hot potatoes.
  7. Garnish with freshly chopped parsley before serving.
