Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- Cut the potatoes in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato on the skin.
Season the Skins
- In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Brush the mixture generously over the potato skins.
Roast the Potato Skins
- Place the potato skins cut side up on a baking sheet.
- Roast in the preheated oven for 20-25 minutes or until crispy and golden brown.
Add Toppings
- Remove the potato skins from the oven and sprinkle with shredded cheddar cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted.
- Garnish with chopped parsley before serving.
