Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Vegetables
  • 4 cups fresh spinach washed and chopped
  • 2 cups cherry tomatoes halved
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
Condiments
  • 3 tbsp olive oil extra virgin
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Sauté the Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and cook for another minute.
Combine Ingredients
  1. Add the halved cherry tomatoes to the skillet and cook for 5 minutes until they start to soften. Then, add the fresh spinach and cook until wilted, about 2-3 minutes.
Mix Pasta and Sauce
  1. Add the drained spaghetti to the skillet with the vegetables. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt and pepper to taste.
Serve
  1. Serve the pasta warm, topped with grated parmesan cheese.
