Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cucumber peeled, fork-scored, and thinly sliced, then diced
  • 1.5 cups cherry tomatoes cut into quarters
  • 8 oz fresh mozzarella
  • 0.5 large red onion chopped into small pieces
  • fresh basil leaves optional

Method
 

  1. In a small bowl, mix together olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Stir until all the ingredients are well combined. Allowing this marinade to sit while you prepare the salad helps infuse those flavors together beautifully.
  2. Start by peeling your washed cucumber. Use a fork to scrape along its surface several times; this creates an attractive texture that helps hold onto the marinade. Slice it thinly and then dice it into small pieces before placing them in a medium-sized bowl.
  3. Quarter your washed cherry tomatoes and add them to the bowl with the diced cucumbers. Next, thinly slice and dice half a red onion before adding it to your mixture. If you're not keen on onion's sharpness, feel free to leave it out—this salad will still shine!
  4. Slice your mozzarella into bite-sized pieces or use pearl-sized mozzarella balls if they're available. Gently fold these into your bowl with cucumbers, tomatoes, and onion. Ensuring all ingredients are evenly distributed allows every bite to be flavorful.
  5. Pour your prepared marinade over the vegetables and cheese in the bowl. Mix everything gently but thoroughly so that each ingredient gets coated in that lovely dressing. Letting your salad sit for about 10 minutes before serving allows those wonderful flavors to develop even further.
