French Onion Soup Pasta

A delicious fusion of classic French onion soup flavors with pasta, topped with melted cheese.

Ingredients
  

Pasta and Broth
  • 12 oz pasta fusilli or penne
  • 4 cups beef broth low sodium
  • 2 cups onions thinly sliced
  • 2 tbsp butter unsalted
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme dried
Toppings
  • 1 cup gruyère cheese shredded
  • 1 cup parmesan cheese grated
  • 2 tbsp fresh parsley chopped for garnish

Method
 

Cook the Onions
  1. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and salt, cooking until the onions are caramelized, about 15-20 minutes, stirring occasionally.
  2. Once caramelized, add thyme and black pepper, stirring to combine.
Prepare the Pasta
  1. In a large pot, bring beef broth to a boil. Add pasta and cook according to package instructions until al dente.
  2. Drain the pasta, reserving 1 cup of the broth.
Combine and Serve
  1. Add the cooked pasta to the skillet with the caramelized onions. Pour in the reserved broth and stir to combine.
  2. Top with gruyère and parmesan cheese, then cover and cook on low heat until the cheese melts, about 5 minutes.
  3. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, substitute beef broth with vegetable broth.
