Prepare the Casserole
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, black beans, corn, and half of the enchilada sauce.
- Spread a thin layer of the remaining enchilada sauce on the bottom of the baking dish.
- Layer half of the tortillas over the sauce, followed by half of the chicken mixture and half of the cheese.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Pour any remaining enchilada sauce over the top layer of cheese.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
- Let the casserole cool for a few minutes before slicing.
- Serve warm, topped with sour cream, green onions, and black olives.
