Ingredients
  

Casserole Base
  • 8 tortillas corn tortillas cut into quarters
  • 2 cups cooked shredded chicken or beef
  • 1 can enchilada sauce 15 oz
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
Toppings
  • 1 cup sour cream for serving
  • 1 cup sliced green onions for garnish
  • 1 cup sliced black olives for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, black beans, corn, and half of the enchilada sauce.
  3. Spread a thin layer of the remaining enchilada sauce on the bottom of the baking dish.
  4. Layer half of the tortillas over the sauce, followed by half of the chicken mixture and half of the cheese.
  5. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  6. Pour any remaining enchilada sauce over the top layer of cheese.
  7. Cover with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the casserole cool for a few minutes before slicing.
  2. Serve warm, topped with sour cream, green onions, and black olives.
