Method
Prepare the Gnocchi
- In a large skillet, heat olive oil over medium heat. Add the gnocchi and sauté until golden brown, about 5 minutes.
- If using, add the zucchini and bell pepper, and cook for an additional 3-4 minutes until softened.
Add Sauce and Cheese
- Pour in the marinara sauce and stir to combine. Bring to a simmer.
- In a bowl, mix the ricotta cheese with Italian seasoning, if using. Dollop the ricotta mixture over the gnocchi.
- Sprinkle with mozzarella and Parmesan cheese.
Cook and Serve
- Cover the skillet and let it cook for about 10 minutes, or until the cheese is melted and bubbly.
- Remove from heat, let cool slightly, and serve warm.
