Ingredients
  

Gnocchi and Sauce
  • 16 ounces store-bought gnocchi
  • 2 cups marinara sauce homemade or store-bought
  • 1 cup ricotta cheese whole milk or part-skim
  • 1 cup shredded mozzarella cheese plus more for topping
  • 1/2 cup grated Parmesan cheese for flavor
  • 1 teaspoon Italian seasoning optional
  • 1 tablespoon olive oil for cooking
Vegetables (optional)
  • 1 cup spinach fresh or frozen
  • 1 medium zucchini sliced
  • 1 medium bell pepper diced

Method
 

Prepare the Gnocchi
  1. In a large skillet, heat olive oil over medium heat. Add the gnocchi and sauté until golden brown, about 5 minutes.
  2. If using, add the zucchini and bell pepper, and cook for an additional 3-4 minutes until softened.
Add Sauce and Cheese
  1. Pour in the marinara sauce and stir to combine. Bring to a simmer.
  2. In a bowl, mix the ricotta cheese with Italian seasoning, if using. Dollop the ricotta mixture over the gnocchi.
  3. Sprinkle with mozzarella and Parmesan cheese.
Cook and Serve
  1. Cover the skillet and let it cook for about 10 minutes, or until the cheese is melted and bubbly.
  2. Remove from heat, let cool slightly, and serve warm.

Notes
