Ingredients
  

Casserole Base
  • 1 lb ground beef lean
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa your favorite variety
  • 1 packet taco seasoning or homemade
Toppings
  • 2 cups tortilla chips crushed
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for serving
  • 1 cup chopped green onions for garnish

Method
 

Prepare the Beef Mixture
  1. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  2. Drain excess fat, then stir in black beans, corn, salsa, and taco seasoning. Cook for an additional 5 minutes.
Assemble the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a casserole dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then the remaining chips on top.
  3. Sprinkle shredded cheese evenly over the top.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven, let cool slightly, and serve with sour cream and chopped green onions on top.
