Prepare the Beef Mixture
- In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
- Drain excess fat, then stir in black beans, corn, salsa, and taco seasoning. Cook for an additional 5 minutes.
Assemble the Casserole
- Preheat the oven to 350°F (175°C).
- In a casserole dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then the remaining chips on top.
- Sprinkle shredded cheese evenly over the top.
Bake
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve
- Remove from the oven, let cool slightly, and serve with sour cream and chopped green onions on top.
