Sweet Potatoes
  • 2 medium sweet potatoes peeled and sliced into rounds
Toppings
  • 1 cup feta cheese crumbled
  • 3 tablespoons honey for drizzling
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon fresh thyme optional, for garnish

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/2 inch rounds and place them in a mixing bowl.
Season and Roast
  1. Drizzle the sweet potato rounds with olive oil, salt, and black pepper. Toss to coat evenly.
  2. Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
  3. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and golden brown.
Add Toppings
  1. Remove the sweet potato rounds from the oven and sprinkle crumbled feta cheese on top.
  2. Drizzle honey over the feta and sweet potatoes.
  3. Optional: Garnish with fresh thyme before serving.
