  • 2 medium sweet potatoes peeled and sliced into rounds
Feta Cheese
  • 100 grams feta cheese crumbled
Honey
  • 3 tablespoons honey for drizzling
Olive Oil
  • 2 tablespoons olive oil for roasting
Salt
  • 1 teaspoon salt to taste
Black Pepper
  • 1 teaspoon black pepper to taste
Fresh Herbs
  • 2 tablespoons fresh herbs such as thyme or parsley, for garnish

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
Roast Sweet Potatoes
  1. Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
  2. Roast in the preheated oven for 20-25 minutes, or until golden and tender, flipping halfway through.
