Cucumber Shrimp Salad

Ingredients
  

  • 2 pounds shrimp peeled and deveined
  • 1 English cucumber small diced
  • 3 green onions thinly sliced
  • β…“ cup mayonnaise
  • β…“ cup sour cream
  • 1 large lime zested and juiced (about 2 teaspoons zest and 2 tablespoons juice)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • ΒΌ teaspoon kosher salt

Method
 

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a medium bowl. Set aside or refrigerate.
  2. Bring a pot of water to a boil, add shrimp, and cook for about 2 to 3 minutes until pink and opaque. Remove from heat.
  3. Prepare an ice water bath in a large bowl. Transfer cooked shrimp into the ice bath for about three minutes, then drain and chop into bite-sized pieces.
  4. Combine chopped shrimp with green onions and diced cucumber in a mixing bowl. Pour in the prepared dressing and stir gently until evenly coated.
