Salad Ingredients
  • 2 cups cucumbers diced
  • 1 cup feta cheese crumbled
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
Lemon Greek Vinaigrette
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the diced cucumbers, crumbled feta cheese, halved cherry tomatoes, sliced red onion, and chopped parsley.
  2. Toss the salad gently to mix all the ingredients evenly.
Make the Vinaigrette
  1. In a small bowl, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the vinaigrette over the salad and toss gently to coat.
  2. Serve immediately or chill in the refrigerator for 15 minutes before serving for enhanced flavors.
