Ingredients
  

Chicken
  • 2 cups cooked chicken shredded or chopped
  • 1 cup panko breadcrumbs for crunch
  • 1 large egg for binding
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Sandwich Assembly
  • 4 slices bread your choice, toasted
  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup parmesan cheese grated

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the shredded chicken, egg, garlic powder, salt, and pepper.
  2. Form the mixture into patties and coat each patty with panko breadcrumbs.
  3. Heat a frying pan over medium heat and cook the patties until golden brown and crispy, about 5-7 minutes per side.
Assemble the Sandwich
  1. Spread Caesar dressing on one side of each slice of toasted bread.
  2. Layer the crispy chicken patty on top of the dressing on two slices of bread.
  3. Add chopped romaine lettuce and sprinkle with grated parmesan cheese.
  4. Top with the remaining slices of bread, dressing side down, and press gently.
Serve
  1. Cut the sandwiches in half and serve immediately with extra Caesar dressing on the side.
