Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 2 tbsp butter (for sauce)
  • 1 serving cooked pasta (optional for serving)

Method
 

  1. Start by mincing your garlic and squeezing fresh lemon juice. Having these essentials ready will make assembling your dish much smoother.
  2. In a skillet over medium-high heat, heat olive oil until it's shimmering. Season your chicken breasts with salt and pepper before placing them in the skillet. Sear until golden brown on both sides.
  3. Layer your seared chicken in the crockpot. Sprinkle minced garlic and capers over the top. Pour in both chicken broth and lemon juice.
  4. Sprinkle Italian seasoning over everything. Cover your crockpot and choose either low for six hours or high for three hours.
  5. Once cooked through, carefully remove the chicken from the crockpot. Whisk butter into the remaining juices to create a rich sauce.
  6. Serve your delicious chicken topped with that velvety sauce over pasta or rice of your choice. Garnish with freshly chopped parsley.
