Crockpot Beef Stew

Ingredients
  

  • 2 tablespoons olive oil divided
  • 2 pounds boneless stewing beef cubes or chuck
  • 1/2 medium onion chopped
  • 6 cloves garlic minced
  • 1 pound Yukon Gold potatoes peeled & diced into fairly large bite-size pieces
  • 4 large carrots peeled & cut into fairly large bite-size pieces
  • 3 sticks celery chopped
  • 3 cups beef broth
  • 1 can tomato paste 6 ounce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • to taste pepper
  • 3 bay leaves
  • 2 tablespoons cornstarch optional

Method
 

  1. Start by adding 1 tablespoon of olive oil to a skillet over medium-high heat. Sear the beef cubes until browned on all sides, then transfer to a plate and repeat with another tablespoon of oil for the remaining beef.
  2. In the same skillet, add chopped onion and cook for about 3–4 minutes until softened. Stir in minced garlic and cook until fragrant—about 30 seconds.
  3. Transfer the cooked onion and garlic mixture into your slow cooker along with all remaining ingredients except bay leaves and cornstarch. Stir to ensure even distribution of flavors.
  4. Gently nestle in the bay leaves. Cover your crockpot and cook on low for 10 hours.
  5. If desired, mix cornstarch with cold water in a small bowl, then stir it into your crockpot during the last ten minutes of cooking.
