Ingredients
  

Beef and Broth
  • 2 pounds beef chuck roast trimmed and cut into large chunks
  • 1 tablespoon olive oil for browning
  • 1 cup beef broth low sodium
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste
Sandwich Assembly
  • 4 sub rolls French or hoagie rolls toasted
  • 8 slices provolone cheese or mozzarella
  • 1 cup prepared au jus for dipping

Method
 

Prepare the Beef
  1. Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides, then transfer to the Crock Pot.
  2. In the Crock Pot, add beef broth, water, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt. Stir to combine.
Cook the Beef
  1. Cover and cook on low for 8 hours or until the beef is tender and shreds easily.
Assemble the Sandwiches
  1. Once the beef is done, shred it using two forks and mix it back into the juices.
  2. Toast the sub rolls and layer with shredded beef and provolone cheese.
  3. Serve with a side of au jus for dipping.

Notes
