Ingredients
  

Patties
  • 2 cups sweet potatoes peeled and cubed
  • 1 cup red lentils rinsed and drained
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped
  • 1 cup bread crumbs for coating
  • 3 tablespoons olive oil for frying

Method
 

Prepare the Lentils
  1. In a pot, combine red lentils with 2 cups of water and bring to a boil. Reduce heat and simmer for 15 minutes until tender.
  2. Drain any excess water and set aside to cool.
Cook the Sweet Potatoes
  1. In a separate pot, boil sweet potatoes in salted water until fork-tender, about 10-15 minutes.
  2. Drain and mash the sweet potatoes in a mixing bowl.
Mix Ingredients
  1. Add the cooked lentils, onion, garlic, cumin, coriander, salt, pepper, and cilantro to the mashed sweet potatoes. Mix until well combined.
Form Patties
  1. Shape the mixture into patties, about 2 inches in diameter.
  2. Coat each patty in bread crumbs.
Cook Patties
  1. Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown.
  2. Transfer cooked patties to a baking sheet and keep warm in the oven at 200°F (93°C) while frying the remaining patties.
Serve
  1. Serve the crispy sweet potato and red lentil patties warm with your favorite dipping sauce.

Notes
