Ingredients
  

Mashed Potato Mixture
  • 2 cups mashed potatoes prepared and cooled
  • 1 cup shredded cheese cheddar or your choice
  • 1 large egg beaten
  • 1/4 cup green onions chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Coating
  • 1 cup bread crumbs for coating
  • 1/2 cup flour for dusting
  • 1 teaspoon paprika optional
Frying
  • 2 cups vegetable oil for frying

Method
 

Prepare the Mashed Potato Mixture
  1. In a mixing bowl, combine the mashed potatoes, shredded cheese, beaten egg, green onions, salt, and black pepper. Mix until well combined.
  2. Chill the mixture in the refrigerator for about 15 minutes to firm up.
Form the Puffs
  1. Once chilled, scoop out portions of the potato mixture and form them into small balls or puffs.
  2. Roll each puff in flour, then dip in beaten egg, and finally coat with bread crumbs mixed with paprika.
Fry the Puffs
  1. In a frying pan, heat the vegetable oil over medium heat.
  2. Fry the potato puffs in batches until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Serve
  1. Serve the crispy mashed potato cheese puffs warm with your favorite dipping sauce.

Notes

These puffs can be made ahead of time and frozen before frying. Just fry them directly from the freezer, adding a couple of extra minutes to the cooking time.
