Ingredients
  

Soup Base
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 cup ditalini pasta
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 cups fresh spinach roughly chopped

Method
 

Prepare the Soup
  1. In a large pot over medium heat, add the Italian sausage and cook until browned, breaking it up with a wooden spoon, about 5 minutes.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Allow to simmer for 10 minutes.
  5. Add the ditalini pasta and cook according to package instructions, about 8-10 minutes.
  6. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  7. Season with salt and black pepper to taste before serving.
