Ingredients
  

  • 1 lb boneless, skinless chicken breasts about 3-4 breasts
  • 16 oz gnocchi fresh or frozen
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 0.5 cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste

Method
 

  1. Start by chopping the chicken into bite-sized pieces.
  2. Heat oil in a large skillet over medium-high heat. Add the chopped chicken and cook until golden brown, about 5–7 minutes.
  3. Lower the heat and add cream cheese along with low-sodium chicken broth. Stir until smooth.
  4. Toss in gnocchi and fresh spinach, covering the skillet to simmer for about 5–7 minutes until the gnocchi are tender.
  5. Stir in shredded cheddar cheese and bacon bits until melted and evenly distributed throughout.
  6. Serve hot in bowls, garnished with extra cheese if desired.
