Ingredients
  

Chicken
  • 4 pieces boneless chicken breasts skinless
Sauce
  • 1 cup fresh cranberries or frozen, thawed
  • 1 cup orange juice freshly squeezed
  • 1/2 cup brown sugar packed
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Garnish
  • 1 orange zest for garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and black pepper.
  2. Heat a skillet over medium heat and add a little oil.
Cook the Chicken
  1. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until cooked through.
Make the Sauce
  1. In a separate bowl, combine cranberries, orange juice, brown sugar, soy sauce, ginger, and garlic.
  2. Pour the sauce over the cooked chicken in the skillet.
  3. Simmer for 10-15 minutes until the sauce thickens and cranberries burst.
Serve
  1. Garnish with orange zest and chopped parsley before serving.
  2. Serve warm with rice or vegetables.
