Method
- Peel the oranges, grapefruit, and blood orange, removing as much pith as possible. Slice the fruit into wheels and layer them on a serving dish. Sprinkle with kosher salt.
- In a small bowl, whisk together extra virgin olive oil, pomegranate juice, apple cider vinegar, honey, and a splash of lemon juice. Adjust seasoning as needed.
- Drizzle the dressing over the layered citrus fruit and garnish with fresh mint leaves and pomegranate arils.
