Ingredients
  

  • 2 large oranges
  • 1 large pink grapefruit
  • 1 medium blood orange
  • to taste kosher salt
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons pomegranate juice
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon honey
  • splash lemon juice to taste
  • to taste fresh mint leaves for garnish
  • to taste pomegranate arils for garnish

Method
 

  1. Peel the oranges, grapefruit, and blood orange, removing as much pith as possible. Slice the fruit into wheels and layer them on a serving dish. Sprinkle with kosher salt.
  2. In a small bowl, whisk together extra virgin olive oil, pomegranate juice, apple cider vinegar, honey, and a splash of lemon juice. Adjust seasoning as needed.
  3. Drizzle the dressing over the layered citrus fruit and garnish with fresh mint leaves and pomegranate arils.
