Ingredients
  

Pretzel Dough
  • 1 cup warm water about 110°F
  • 2 tablespoons granulated sugar
  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter melted
Baking Soda Solution
  • 1 cup baking soda
  • 10 cups water for boiling
Cinnamon Sugar Topping
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
Egg Wash
  • 1 large egg
  • 1 tablespoon water

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour, salt, and melted butter to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
Shape the Pretzels
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Punch down the risen dough and divide it into 8 equal pieces.
  3. Roll each piece into a long rope, about 24 inches long, and shape into a pretzel.
Boil and Bake
  1. In a saucepan, bring 10 cups of water and 1 cup of baking soda to a boil.
  2. Boil each pretzel for about 30 seconds, then remove and place on the prepared baking sheet.
  3. Mix the egg and water for the egg wash, then brush it over each pretzel.
  4. Bake in the preheated oven for 12-15 minutes until golden brown.
Add Topping
  1. In a small bowl, mix the sugar and cinnamon for the topping.
  2. Once the pretzels are out of the oven, immediately sprinkle the cinnamon sugar mixture over them.
  3. Let cool slightly before serving.
