Prepare the Dough
- In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- Add flour, salt, and melted butter to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
Shape the Pretzels
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 8 equal pieces.
- Roll each piece into a long rope, about 24 inches long, and shape into a pretzel.
Boil and Bake
- In a saucepan, bring 10 cups of water and 1 cup of baking soda to a boil.
- Boil each pretzel for about 30 seconds, then remove and place on the prepared baking sheet.
- Mix the egg and water for the egg wash, then brush it over each pretzel.
- Bake in the preheated oven for 12-15 minutes until golden brown.
Add Topping
- In a small bowl, mix the sugar and cinnamon for the topping.
- Once the pretzels are out of the oven, immediately sprinkle the cinnamon sugar mixture over them.
- Let cool slightly before serving.
