Ingredients
  

Grilled Chicken
  • 1 pound boneless, skinless chicken breasts sliced into strips
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Salad Base
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cilantro finely chopped

Method
 

Marinate Chicken
  1. In a mixing bowl, combine chopped cilantro, lime juice, olive oil, garlic powder, salt, and black pepper. Add chicken strips and toss to coat. Marinate for at least 15 minutes.
Grill Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center.
Prepare Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, avocado, red onion, and feta cheese.
Make Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, black pepper, and chopped cilantro until well combined.
Assemble Salad
  1. Slice the grilled chicken and place it on top of the salad. Drizzle with the dressing and toss gently to combine. Serve immediately.
