Ingredients
  

Chicken Skewers
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil for grilling
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup honey buffalo sauce store-bought or homemade
Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion thinly sliced
Dressing
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare Chicken Skewers
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, toss the chicken pieces with olive oil, salt, and pepper.
  3. Thread the chicken onto skewers.
Grill Chicken
  1. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until fully cooked.
  2. During the last few minutes of cooking, brush the chicken with honey buffalo sauce.
Prepare Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss to combine.
Assemble and Serve
  1. Remove the chicken skewers from the grill and let them rest for a few minutes.
  2. Chop the chicken into bite-sized pieces and add to the salad.
  3. Serve the salad with additional honey buffalo sauce if desired.
