Chocolate Peanut Butter Filled Cookies

Ingredients
  

  • 1 cup peanut butter creamy JIF or Skippy
  • 1/2 cup powdered sugar sifted
  • 1/2 tsp ground cinnamon
  • 2 1/4 cups all-purpose flour
  • 1/2 cup Dutch process cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter melted
  • 1 1/4 cups brown sugar packed light or dark
  • 1/4 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs room temperature
  • 1 1/2 cups semi-sweet chocolate chips

Method
 

  1. In a mixing bowl, combine the peanut butter, powdered sugar, and ground cinnamon. Set aside.
  2. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. In a separate bowl, mix melted butter with brown and white sugars until creamy. Add vanilla and eggs one at a time.
  3. Gradually add dry ingredients to wet ingredients until just combined. Fold in chocolate chips.
  4. Preheat oven to 350°F (175°C). Take two tablespoons of dough, flatten, add peanut butter filling, fold and roll into a ball.
  5. Arrange on parchment-lined baking sheets and bake for 12–15 minutes. Cool on baking sheets before transferring to wire racks.
