Ingredients
  

Chicken Shawarma
  • 1 pound boneless chicken thighs skinless
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cloves garlic minced
  • 1 lemon juice
Rice Base
  • 2 cups basmati rice
  • 4 cups water
  • 1 teaspoon salt
Toppings
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 cup red onion thinly sliced
  • 1 cup fresh parsley chopped
  • 1 cup hummus for serving
  • 1 cup tzatziki sauce for serving

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, cumin, paprika, turmeric, cinnamon, salt, pepper, garlic, and lemon juice. Add chicken thighs and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let rest before slicing.
Cook the Rice
  1. In a rice cooker, combine basmati rice, water, and salt. Cook according to the rice cooker's instructions.
Assemble the Bowl
  1. In each serving bowl, place a scoop of rice as the base. Top with sliced grilled chicken, diced cucumber, halved cherry tomatoes, sliced red onion, and chopped parsley.
  2. Serve with hummus and tzatziki sauce on the side.
