Method
Prepare the Chicken
- In a mixing bowl, combine olive oil, cumin, paprika, turmeric, cinnamon, salt, pepper, garlic, and lemon juice. Add chicken thighs and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let rest before slicing.
Cook the Rice
- In a rice cooker, combine basmati rice, water, and salt. Cook according to the rice cooker's instructions.
Assemble the Bowl
- In each serving bowl, place a scoop of rice as the base. Top with sliced grilled chicken, diced cucumber, halved cherry tomatoes, sliced red onion, and chopped parsley.
- Serve with hummus and tzatziki sauce on the side.
