Ingredients
  

Meatball Mixture
  • 1 lb Ground Chicken Use lean ground chicken for best results.
  • 1 cup Ricotta Cheese Fresh ricotta is recommended.
  • 1/2 cup Parmesan Cheese Grated.
  • 1 large Egg Beaten.
  • 1 cup Breadcrumbs Use plain or Italian seasoned.
  • 2 cloves Garlic Minced.
  • 1 tbsp Fresh Parsley Chopped.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black Pepper Freshly ground.
Sauce
  • 2 cups Marinara Sauce Store-bought or homemade.

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, ricotta cheese, Parmesan cheese, beaten egg, breadcrumbs, minced garlic, parsley, salt, and pepper.
  3. Mix until well combined, but do not overmix.
  4. Form the mixture into meatballs, about 1.5 inches in diameter.
Bake Meatballs
  1. Place the meatballs on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
Prepare Sauce
  1. While the meatballs are baking, heat marinara sauce in a skillet over medium heat.
  2. Once the meatballs are done, add them to the sauce and simmer for 5 minutes.
Serve
  1. Serve the meatballs hot, garnished with additional parsley and Parmesan if desired.
