Ingredients
  

Meatballs
  • 1 lb Ground Chicken Use lean ground chicken.
  • 1/2 cup Breadcrumbs Panko breadcrumbs recommended.
  • 1/4 cup Parmesan Cheese Grated.
  • 1 large Egg Beaten.
  • 2 cloves Garlic Minced.
  • 1 tbsp Fresh Parsley Chopped.
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
Sauce
  • 1/4 cup Fresh Lemon Juice About 2 lemons.
  • 1 cup Chicken Broth Low sodium.
  • 2 tbsp Capers Rinsed.
  • 2 tbsp Butter Unsalted.
  • 1 tbsp Olive Oil

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper.
  3. Mix until just combined, then form into meatballs about 1 inch in diameter.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes or until cooked through (internal temperature of 165°F).
Make the Sauce
  1. In a skillet, heat olive oil and butter over medium heat.
  2. Add the capers and sauté for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and lemon juice, bringing to a simmer.
  4. Let the sauce reduce for about 5 minutes.
  5. Add the baked meatballs to the skillet and coat them in the sauce.
Serve
  1. Serve the meatballs warm, drizzled with the sauce and garnished with additional parsley if desired.

Notes
