Prepare the Meatballs
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper.
- Mix until just combined, then form into meatballs about 1 inch in diameter.
- Place meatballs on a baking sheet lined with parchment paper.
- Bake for 20 minutes or until cooked through (internal temperature of 165°F).
Make the Sauce
- In a skillet, heat olive oil and butter over medium heat.
- Add the capers and sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth and lemon juice, bringing to a simmer.
- Let the sauce reduce for about 5 minutes.
- Add the baked meatballs to the skillet and coat them in the sauce.
Serve
- Serve the meatballs warm, drizzled with the sauce and garnished with additional parsley if desired.
