Chicken Kofta with Garlic Yogurt Sauce

Ingredients
  

  • 500 grams ground chicken (about 1 pound)
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1/4 cup fresh parsley finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil (for grilling)
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice

Method
 

  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, and chopped parsley.
  2. Add ground cumin, ground coriander, salt, and black pepper to the bowl. Mix until everything is well combined.
  3. Wet your hands slightly to prevent sticking and shape the mixture into elongated oval kofta.
  4. Preheat your grill or grill pan over medium-high heat and brush it lightly with olive oil.
  5. Place the shaped kofta onto the grill and cook for about 5 to 7 minutes on each side until they are golden brown and cooked through.
  6. In a small bowl, mix together plain yogurt, lemon juice, and a pinch of salt to create your garlic yogurt sauce.
  7. Serve your grilled kofta alongside the garlic yogurt sauce and any sides you love.
