Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Spinach
  • 6 cups fresh spinach washed and chopped
Cream Sauce
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese grated
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon Italian seasoning

Method
 

Prepare Chicken
  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Make Cream Sauce
  1. In the same skillet, add the remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant.
  2. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and parmesan cheese, whisking until smooth.
  3. Let the sauce simmer for about 5 minutes until it thickens slightly. Season with salt and pepper to taste.
Combine and Serve
  1. Add the chopped spinach to the sauce and cook for 2-3 minutes until wilted.
  2. Return the cooked chicken to the skillet, coating it in the sauce. Cook for an additional 2 minutes to heat through.
  3. Serve the chicken on a plate with the creamy spinach sauce poured over the top.
