Ingredients
  

Chicken and Avocado
  • 2 cups cooked chicken breast shredded or sliced
  • 1 medium avocado mashed
  • 1 teaspoon lime juice for flavor
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Sandwich Assembly
  • 8 slices whole grain bread or bread of choice
  • 1 cup cheddar cheese shredded
  • 2 tablespoons butter for grilling

Method
 

Prepare Chicken and Avocado Mixture
  1. In a bowl, combine the shredded chicken, mashed avocado, lime juice, salt, and black pepper. Mix until well combined.
  2. Taste and adjust seasoning if necessary.
Assemble the Sandwich
  1. Spread a generous amount of the chicken and avocado mixture on one slice of bread.
  2. Top with shredded cheddar cheese and another slice of bread.
Grill the Sandwich
  1. Heat a skillet over medium heat and add butter.
  2. Once the butter is melted and bubbling, place the sandwich in the skillet.
  3. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve
  1. Remove the sandwich from the skillet, slice in half, and serve warm.
