Prepare the Mixture
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cooked chicken, chopped spinach, cream cheese, sour cream, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Assemble the Casserole
- Transfer the chicken and spinach mixture into a greased casserole dish, spreading it evenly.
- In a separate bowl, mix the panko breadcrumbs with olive oil until the breadcrumbs are coated. Sprinkle the breadcrumb mixture over the chicken and spinach mixture.
Bake the Casserole
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
- Remove from the oven and let it cool for a few minutes before serving.
